These soft and fluffy blueberry biscuits are golden on the outside, tender on the inside, and bursting with juicy blueberries. Finished with a sweet vanilla glaze, they make the perfect breakfast, snack, or dessert.
Ingredients
For the Biscuits:
- 2 cups all-purpose flour
- 1/3 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup cold unsalted butter, cubed
- 3/4 cup milk or buttermilk
- 1 teaspoon vanilla extract
- 1 cup fresh or frozen blueberries
For the Glaze (Optional):
- 1 cup powdered sugar
- 2 tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- Cut the cold butter into the flour mixture until it resembles coarse crumbs.
- Add milk and vanilla extract, stirring just until a soft dough forms.
- Gently fold in the blueberries, being careful not to crush them.
- Turn the dough onto a floured surface, lightly knead, and pat into a 1-inch thick rectangle.
- Cut into round or square biscuits and place them on the baking sheet.
- Bake for 15–18 minutes, or until golden brown.
Make the Glaze
In a small bowl, whisk powdered sugar, milk, and vanilla until smooth. Drizzle over cooled biscuits.
