Ingredients

For the Creamy Sun-Dried Tomato Sauce

  • 1 tbsp butter
  • 3 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped (oil-packed preferred)
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • ½ tsp paprika
  • ½ tsp dried basil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken on both sides with salt, pepper, garlic powder, and Italian seasoning.
  3. Sear the chicken in an oven-safe skillet over medium heat with olive oil for 2–3 minutes per side until lightly golden. Remove and set aside.
  4. In the same skillet, melt butter and sauté garlic for 30 seconds until fragrant.
  5. Add sun-dried tomatoes, then stir in heavy cream and chicken broth.
  6. Mix in Parmesan cheese, paprika, basil, salt, and pepper. Simmer for 3–5 minutes until slightly thickened.
  7. Return the chicken to the pan and spoon the creamy sauce generously over each piece.
  8. Bake uncovered for 20–25 minutes, or until chicken reaches 165°F (74°C) internally.
  9. Garnish with fresh basil or parsley and extra Parmesan before serving.
