 Creamed Chipped Beef

Ingredients

  • 8 oz (225 g) chipped beef, sliced
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1½–2 cups milk (whole milk preferred)
  • ¼ tsp black pepper (to taste)
  • Pinch of garlic powder (optional)
  • Pinch of onion powder (optional)
  • Toast bread, for serving

Instructions

  1. If the beef is very salty, soak it in warm water for 5–10 minutes, then drain and slice into strips.
  2. In a skillet over medium heat, melt the butter.
  3. Add the flour and whisk for 1–2 minutes to form a light roux.
  4. Slowly pour in the milk while whisking constantly to prevent lumps.
  5. Continue cooking until the sauce thickens into a creamy gravy.
  6. Stir in the chipped beef and let it simmer for 4–5 minutes.
  7. Season with black pepper, garlic powder, and onion powder to taste.

Serving Suggestion

Serve hot over toasted bread — the traditional American way (often called “SOS”).

Tips

  • Add more milk if the sauce is too thick.
  • Simmer longer if it’s too thin.
  • Optional add-ins: peas, mushrooms, or a pinch of paprika.
