Ingredients
- 3–4 lbs potatoes (Yukon Gold or red potatoes), washed and cut into chunks
- 2 tablespoons butter or olive oil
- 1 cup heavy cream
- ½ cup milk or chicken broth
- 4 oz cream cheese, softened (optional but recommended)
- ½ cup shredded cheese (Parmesan or cheddar)
- 3 cloves garlic, minced
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 1 teaspoon Italian seasoning (or thyme + rosemary)
- 2 tablespoons chopped chives or parsley
- Optional: ½ cup cooked bacon or diced ham
Instructions
- Prepare the potatoes
Wash and chop the potatoes into evenly sized chunks so they cook evenly. - Add potatoes to slow cooker
Place the potatoes into the slow cooker and drizzle with butter or olive oil. - Season the potatoes
Add salt, pepper, garlic powder, onion powder, minced garlic, and Italian seasoning. Stir to coat evenly. - Make the creamy sauce
In a bowl, whisk together heavy cream, milk (or broth), cream cheese, and shredded cheese until smooth. - Pour over potatoes
Pour the creamy sauce evenly over the potatoes. - Cook low and slow
Cover and cook:- On LOW for 5–6 hours, or
- On HIGH for 3–4 hours,
until potatoes are fork-tender.
- Stir and finish
Gently stir the potatoes to coat them in the creamy sauce. Taste and adjust seasoning if needed. - Garnish and serve
Sprinkle chopped chives or parsley on top and serve warm.
