Keto Crispy Reuben Roll-Ups
Crispy, cheesy, savory roll-ups that taste just like a Reuben sandwich… without the carbs!
Ingredients
- 2 cups shredded Swiss cheese
- ½ pound sliced corned beef (deli meat)
- 1 cup sauerkraut, well drained
- ¼ cup mayonnaise
Instructions
- Preheat the oven
Preheat to 400°F (200°C). Line a baking sheet with parchment paper. - Make the cheese base
Sprinkle the shredded Swiss cheese into 6–8 small piles on the baking sheet, flattening each into a thin circle. - Bake the cheese
Bake for 5–7 minutes, or until the cheese is melted and lightly golden around the edges. - Add the fillings
Remove from the oven. While the cheese is still hot and flexible:- Place corned beef slices on each cheese round
- Add a small spoon of sauerkraut
- Drizzle with a little mayonnaise
- Roll them up
Carefully roll each cheese round into a tight roll-up. - Crisp them again
Return to the oven and bake for 3–5 more minutes, until crispy and golden. - Cool slightly & serve
Let them cool for 1–2 minutes so they firm up, then enjoy!
Optional Tips
- Add a pinch of caraway seeds for authentic Reuben flavor
- Serve with sugar-free Thousand Island dressing for dipping
- You can also make these in an air fryer at 375°F (190°C) for about 6–8 minutes
