Cheesy Beef Stuffed Potatoes
Tender baked potatoes stuffed with seasoned ground beef, creamy mashed potato filling, and melted cheese. A rich, comforting, and family-favorite meal!
Ingredients
For the Potatoes:
- 4 large baking potatoes
- 2 tablespoons butter
- ¼ cup sour cream (or plain yogurt – optional)
- ½ cup shredded cheese (cheddar or mozzarella)
- Salt and black pepper, to taste
For the Beef Filling:
- 1 lb (450 g) ground beef
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon paprika
- ½ teaspoon Italian seasoning (optional)
- ½ cup tomato sauce or beef broth
- 1 cup shredded cheese (for filling and topping)
Optional Toppings:
- Chopped green onions
- Fresh parsley
- Extra cheese
Instructions
Bake the Potatoes:
- Preheat oven to 400°F (200°C)
- Wash potatoes well and poke a few holes with a fork
- Bake for 50–60 minutes, until soft and tender inside
Cook the Beef Filling:
- Heat a pan with a little oil
- Sauté the chopped onion until soft
- Add garlic and cook for 30 seconds
- Add ground beef and cook until browned
- Season with salt, pepper, paprika, and Italian seasoning
- Stir in tomato sauce or broth and simmer 5 minutes
Prepare the Potato Mash:
- Cut the baked potatoes in half lengthwise
- Carefully scoop out the inside into a bowl
- Mash with butter, sour cream, shredded cheese, salt, and pepper
Mix and Stuff:
- Combine the mashed potatoes with the cooked beef mixture
- Spoon the filling back into the potato skins, packing it well
Bake Again:
- Sprinkle extra shredded cheese on top
- Bake for 10–15 minutes until cheese melts and turns golden
