Low-Carb Bacon Cheddar Mini Cheese Balls
Ingredients
- 8 oz (225 g) cream cheese, softened
- 1 cup shredded sharp cheddar cheese
- 6 slices bacon, cooked until crispy and finely crumbled
- 2 tablespoons green onions or chives, finely chopped
- ½ teaspoon garlic powder
- ¼ teaspoon onion powder
- ¼ teaspoon black pepper
- Salt to taste (optional)
For coating (optional):
- Extra bacon crumbs
- Chopped parsley or chives
- Crushed nuts (almonds or pecans – low carb)
Instructions
- In a medium bowl, mix the softened cream cheese until smooth.
- Add the shredded cheddar cheese, bacon crumbles, green onions, garlic powder, onion powder, and black pepper. Mix well until fully combined.
- Taste and add salt if needed.
- Cover the mixture and refrigerate for 20–30 minutes to make it easier to handle.
- Scoop small portions and roll into mini balls using your hands.
- Roll the cheese balls in extra bacon crumbs, herbs, or nuts if desired.
- Chill for another 15 minutes before serving.
