Low-Carb Bacon Cheeseburger Casserole
A hearty, cheesy, and satisfying low-carb casserole that tastes just like a bacon cheeseburger—without the bun!
Ingredients
- 1 lb (450 g) ground beef
- 6 slices bacon, cooked and crumbled
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- ½ cup heavy cream
- 2 large eggs
- 2 tablespoons tomato paste or sugar-free ketchup
- 1 teaspoon mustard (yellow or Dijon)
- 1 teaspoon paprika
- ½ teaspoon black pepper
- ½ teaspoon salt (or to taste)
- 1 tablespoon olive oil or butter
- Optional toppings: sliced pickles, chopped parsley, green onions
Instructions
- Preheat the oven
Preheat your oven to 375°F (190°C). Lightly grease a baking dish. - Cook the bacon
Cook the bacon in a skillet until crispy. Remove, crumble, and set aside. - Cook the beef
In the same skillet, add olive oil or butter if needed.
Sauté the onion for 2–3 minutes until soft. Add garlic and cook for 30 seconds.
Add ground beef and cook until browned. Drain excess fat. - Season the mixture
Stir in tomato paste (or sugar-free ketchup), mustard, paprika, salt, and pepper.
Mix well, then remove from heat. - Prepare the casserole
Spread the beef mixture evenly into the baking dish.
Sprinkle the crumbled bacon over the top. - Make the cheese mixture
In a bowl, whisk together eggs and heavy cream.
Stir in half of the cheddar and mozzarella cheeses. - Assemble & bake
Pour the cheese mixture over the beef.
Top with remaining cheese.
Bake for 25–30 minutes, or until bubbly and golden. - Serve
Let rest for 5 minutes before serving.
Garnish with pickles, parsley, or green onions if desired.
