Atlantic Beach Pie

Ingredients

For the Crust:

  • 1½ cups crushed saltine crackers
  • ½ cup unsalted butter, melted
  • 3 tablespoons granulated sugar

For the Filling:

  • 1 (14-oz) can sweetened condensed milk
  • 4 large egg yolks
  • ½ cup fresh lemon or lime juice (or a mix of both)

For the Topping:

  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat the oven
    Preheat oven to 350°F (180°C).
  2. Make the crust
    In a bowl, mix crushed saltines, melted butter, and sugar until combined.
    Press the mixture firmly into a 9-inch pie dish, covering the bottom and sides.
    Bake for 15 minutes, then remove and let cool slightly.
  3. Prepare the filling
    In a bowl, whisk together sweetened condensed milk and egg yolks until smooth.
    Slowly whisk in the lemon or lime juice until fully combined.
  4. Bake the pie
    Pour the filling into the warm crust.
    Bake for 15–18 minutes, until the filling is set but still slightly jiggly in the center.
    Remove from oven and let cool completely, then refrigerate for at least 4 hours.
  5. Whip the topping
    Beat the heavy cream with powdered sugar and vanilla until soft peaks form.
  6. Serve
    Spread or dollop whipped cream over the chilled pie before serving.
