No-Bake Cheesecake
Ingredients
For the crust
- 200 g digestive biscuits (or graham crackers)
- 100 g unsalted butter, melted
For the filling
- 16 oz (450 g) cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream (cold)
- 1 tablespoon lemon juice (optional, for freshness)
Optional toppings
- Strawberry or blueberry sauce
- Fresh fruit
- Chocolate or caramel drizzle
Instructions
- Make the crust
Crush the biscuits into fine crumbs.
Mix with melted butter until combined.
Press firmly into the bottom of a 9-inch springform pan.
Refrigerate for 20–30 minutes to set. - Prepare the filling
In a large bowl, beat the cream cheese until smooth.
Add powdered sugar, vanilla, and lemon juice. Mix until creamy. - Whip the cream
In a separate bowl, whip the cold heavy cream until stiff peaks form. - Combine
Gently fold the whipped cream into the cream cheese mixture until smooth and fluffy. - Assemble
Spread the filling over the chilled crust and smooth the top. - Chill
Refrigerate for at least 4 hours (overnight is best). - Serve
Add your favorite topping before slicing.
Tips
- For extra firmness, chill overnight
- Want it sweeter or lighter? Adjust sugar or cream
- Works perfectly with Oreo, Lotus, or chocolate crusts
