Mongolian Ground Beef Noodles
Sweet, savory, and packed with flavor! This quick noodle dish is perfect for busy weeknights and tastes better than takeout.
 Ingredients
🔹 Main:
- 8 oz (225 g) noodles (lo mein, spaghetti, or egg noodles)
- 1 lb (450 g) ground beef
- 1 tablespoon vegetable oil
- 4 cloves garlic, minced
- 1 teaspoon fresh ginger, grated (or ½ tsp ground ginger)
🔹 Sauce:
- ½ cup low-sodium soy sauce
- ½ cup brown sugar
- 1 cup beef broth or water
- 1 tablespoon hoisin sauce (optional but recommended)
- 1 teaspoon cornstarch + 1 tablespoon water (slurry)
 Optional Add-ins:
- 1 cup green onions, sliced
- ½ teaspoon red pepper flakes (optional)
- Sesame seeds for garnish
 Instructions
- Cook the Noodles
- Cook noodles according to package instructions.
- Drain and set aside.
- Brown the Beef
- Heat oil in a large skillet or wok over medium-high heat.
- Add ground beef and cook until browned, breaking it apart.
- Drain excess fat if needed.
- Add Aromatics
- Stir in garlic and ginger.
- Cook for about 30 seconds until fragrant.
- Make the Sauce
- Add soy sauce, brown sugar, beef broth, and hoisin sauce.
- Bring to a gentle simmer.
- Thicken
- Stir in the cornstarch slurry.
- Cook until the sauce thickens (about 2–3 minutes).
- Combine
- Add cooked noodles to the skillet.
- Toss well until noodles are coated in sauce.
- Finish & Serve
- Stir in green onions and red pepper flakes if using.
- Garnish with sesame seeds and serve hot.
