Firecracker Smoked Bacon Triple-Cheese Meatloaf Skillet
Ingredients:
– 1 lb ground beef
– 1/2 lb ground pork
– 1/2 cup bread crumbs
– 1/4 cup diced onions
– 1/4 cup diced bell peppers
– 1/4 cup diced jalapenos
– 1 tsp garlic powder
– 1 tsp paprika
– 1/2 tsp salt
– 1/4 tsp black pepper
– 1/2 cup shredded cheddar cheese
– 1/2 cup shredded mozzarella cheese
– 1/2 cup shredded pepper jack cheese
– 6 slices of smoked bacon
– 1/4 cup BBQ sauce
– 1/4 cup ketchup
– 1/4 cup brown sugar
Instructions:
Preheat your oven to 375°F. In a large mixing bowl, combine the ground beef, ground pork, bread crumbs, onions, bell peppers, jalapenos, garlic powder, paprika, salt, and black pepper. Mix well until all ingredients are evenly incorporated. Fold in the shredded cheddar, mozzarella, and pepper jack cheeses. Transfer the meat mixture to a cast iron skillet, shaping it into a loaf shape. Lay the slices of smoked bacon over the top of the meatloaf. In a small bowl, whisk together the BBQ sauce, ketchup, and brown sugar. Pour this mixture over the bacon-topped meatloaf. Place the skillet in the preheated oven and bake for 45-50 minutes, or until the internal temperature of the meatloaf reaches 160°F. Let the meatloaf rest for 5 minutes before slicing and serving.
