Cheddar Bay Chicken Cobbler

A cozy, cheesy chicken cobbler inspired by Cheddar Bay biscuits—rich, savory, and perfect comfort food!

Ingredients

Chicken Filling

  • 3 cups cooked chicken, shredded or diced
  • 4 tbsp unsalted butter, divided
  • 3 tbsp all-purpose flour
  • 2 cups chicken broth
  • 1 cup whole milk or half-and-half
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp paprika
  • ½ tsp salt (or to taste)
  • ½ tsp black pepper
  • 1 cup shredded cheddar cheese

Biscuit Topping

  • 1 cup all-purpose flour
  • 1½ tsp baking powder
  • ½ tsp salt
  • ½ tsp garlic powder
  • ½ cup shredded cheddar cheese
  • ¾ cup milk

Garlic Butter Topping

  • 2 tbsp melted butter
  • ½ tsp garlic powder
  • ½ tsp dried parsley (optional)

Instructions

  1. Preheat Oven
    Preheat your oven to 375°F (190°C). Lightly grease a baking dish.
  2. Make the Chicken Filling
    • In a skillet over medium heat, melt 2 tbsp butter.
    • Whisk in the flour and cook for 1 minute.
    • Slowly whisk in chicken broth and milk until smooth.
    • Add garlic powder, onion powder, paprika, salt, and pepper.
    • Cook until the sauce thickens (about 3–5 minutes).
    • Stir in chicken and cheddar cheese.
    • Pour mixture into the prepared baking dish.
  3. Prepare Biscuit Topping
    • In a bowl, mix flour, baking powder, salt, garlic powder, and cheddar cheese.
    • Stir in milk just until combined (do not overmix).
  4. Assemble
    • Spoon biscuit batter evenly over the chicken filling.
    • Dot the top with the remaining 2 tbsp butter.
  5. Bake
    Bake uncovered for 35–40 minutes, or until the topping is golden and cooked through.
  6. Garlic Butter Finish
    • Mix melted butter with garlic powder and parsley.
    • Brush over the hot cobbler right out of the oven.
  7. Serve
    Let rest for 5–10 minutes, then serve warm 😋
