STUFFED MELTY FLATBREADS WITH MEAT & CHEESE

👉 A cross between batbout, msemen, and a hot stuffed sandwich — ultra soft on the inside and lightly crispy on the outside.

INGREDIENTS (8 FLATBREADS)

DOUGH

  • 400 g all-purpose flour
  • 100 g fine semolina
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1 packet active dry yeast
  • 2 tablespoons oil
  • About 300 ml warm water

FILLING

  • 300 g ground meat (beef or beef & lamb)
  • 1 onion, grated
  • 1 teaspoon paprika
  • ½ teaspoon cumin
  • Salt and black pepper, to taste
  • Grated cheese (mozzarella or cheese blend)
  • Chopped parsley or cilantro

INSTRUCTIONS

  1. In a large bowl, combine all the dough ingredients and knead until soft and smooth.
  2. Cover and let the dough rise for 1 hour, or until doubled in size.
  3. In a skillet over medium heat, cook the ground meat with the grated onion, spices, salt, pepper, and herbs until fully cooked. Let cool completely.
  4. Divide the dough into equal balls.
  5. Flatten each ball, add some meat filling and grated cheese, then seal well.
  6. Gently flatten into a round flatbread.
  7. Cook on a hot skillet over medium heat with very little oil until golden brown on both sides.

SERVING SUGGESTIONS

Serve hot with a fresh salad, yogurt sauce, or your favorite dipping sauce.
