 Rotel Cream Cheese Sausage Balls

Ingredients

  • 1 lb (450 g) ground sausage (hot or mild, your choice)
  • 8 oz (225 g) cream cheese, softened
  • 1 can (10 oz / 283 g) Rotel diced tomatoes & green chilies, very well drained
  • 2 cups shredded cheddar cheese
  • 2 cups baking mix (like Bisquick)
  • ½ tsp garlic powder (optional)
  • ½ tsp onion powder (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a large bowl, mix the sausage and softened cream cheese until well combined.
  3. Add the drained Rotel, shredded cheddar cheese, and seasonings. Mix well.
  4. Stir in the baking mix until a thick dough forms.
  5. Roll into 1-inch balls and place on the prepared baking sheet.
  6. Bake for 22–25 minutes, or until golden brown and cooked through.
  7. Let cool slightly, then serve warm.

Tips

  • Drain the Rotel very well to avoid soggy balls.
  • Serve with ranch dressing, spicy mayo, or honey mustard.
  • These freeze great — bake straight from frozen, adding 3–5 minutes.
