Peanut Butter Chocolate Chip Cookie Bars

Ingredients

  • 1 cup peanut butter (creamy or chunky)
  • ½ cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 1 ½ cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 to 1½ cups chocolate chips (semi-sweet or milk)

Preparation

1. Prep the Oven

  • Preheat oven to 175°C / 350°F
  • Line a 9×13 inch (23×33 cm) baking pan with parchment paper or grease well.

2. Make the Batter

  • In a large bowl, cream together peanut butter, butter, and brown sugar until smooth.
  • Add vanilla extract and eggs, mix until fully combined.
  • In another bowl, whisk together flour, baking soda, and salt.
  • Gradually add dry ingredients to the wet mixture.
  • Fold in the chocolate chips.

3. Bake

  • Spread the batter evenly into the prepared pan.
  • Bake for 22–28 minutes, until the top is lightly golden and a toothpick comes out with a few moist crumbs.

4. Cool & Slice

  • Let cool completely in the pan.
  • Cut into squares or bars.

Tips

  • For extra gooey bars: slightly underbake.
  • For thicker bars: use an 8×8 pan and bake a few minutes longer.
  • Sprinkle a little sea salt on top before baking for a sweet-salty touch.
