Smothered Cheesy Sour Cream Chicken

Ingredients
- 4 boneless chicken breasts or thighs
- 1 tbsp olive oil or butter
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp black pepper
- ½ tsp salt (or to taste)
- 1 cup sour cream
- 1 cup shredded cheddar cheese (or mozzarella/Colby Jack)
- ½ cup chicken broth
- 1 tsp dried parsley or thyme (optional)
Instructions
- Season the Chicken
Pat chicken dry. Season both sides with paprika, garlic powder, onion powder, salt, and pepper. - Sear
Heat olive oil or butter in a large skillet over medium heat.
Sear chicken 3–4 minutes per side until lightly golden (not fully cooked). Remove and set aside. - Make the Sauce
Lower heat. Add chicken broth to the skillet and scrape up browned bits.
Stir in sour cream until smooth. - Smother & Cook
Return chicken to the skillet. Spoon sauce over the top.
Cover and simmer 15–20 minutes until chicken is cooked through. - Add Cheese
Sprinkle shredded cheese over chicken. Cover again and cook 3–5 minutes until melted and bubbly.
