One-Pan Cheesy Jalapeño Chicken
A quick, flavorful, and cheesy chicken dish with a spicy kick. Perfect for a weeknight dinner, all made in one pan for easy cleanup!
Ingredients
- 4 boneless chicken breasts or thighs
- 1 tbsp olive oil or butter
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika (optional for extra flavor)
- Salt and pepper to taste
- 1 cup shredded cheddar cheese (or a mix of cheddar and Monterey Jack)
- 2–3 jalapeños, thinly sliced (adjust to your spice preference)
- ½ cup heavy cream or cream cheese (for extra creaminess)
- Fresh parsley or cilantro, chopped (for garnish)
Instructions
- Prep the chicken: Pat the chicken dry and season both sides with garlic powder, onion powder, smoked paprika, salt, and pepper.
- Sear the chicken: Heat olive oil or butter in a large skillet over medium-high heat. Add the chicken and sear for 4–5 minutes per side until golden brown.
- Add jalapeños: Reduce heat to medium. Add sliced jalapeños on top of the chicken and cook for 2–3 minutes until slightly softened.
- Add cheese and cream: Pour heavy cream (or add dollops of cream cheese) over the chicken, then sprinkle the shredded cheese evenly on top. Cover the skillet with a lid and let it cook for 3–5 minutes until the cheese melts and the chicken is fully cooked (internal temperature 165°F / 74°C).
- Garnish and serve: Sprinkle fresh parsley or cilantro on top before serving. Serve with rice, pasta, or a side salad for a complete meal.
Tips
- For extra flavor, you can add a squeeze of lime juice or a pinch of chili flakes.
- If you like it extra cheesy, add more cheese on top before serving.
