 One-Pan Cheesy Jalapeño Chicken

A quick, flavorful, and cheesy chicken dish with a spicy kick. Perfect for a weeknight dinner, all made in one pan for easy cleanup!

 Ingredients

  • 4 boneless chicken breasts or thighs
  • 1 tbsp olive oil or butter
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika (optional for extra flavor)
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese (or a mix of cheddar and Monterey Jack)
  • 2–3 jalapeños, thinly sliced (adjust to your spice preference)
  • ½ cup heavy cream or cream cheese (for extra creaminess)
  • Fresh parsley or cilantro, chopped (for garnish)

 Instructions

  1. Prep the chicken: Pat the chicken dry and season both sides with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Sear the chicken: Heat olive oil or butter in a large skillet over medium-high heat. Add the chicken and sear for 4–5 minutes per side until golden brown.
  3. Add jalapeños: Reduce heat to medium. Add sliced jalapeños on top of the chicken and cook for 2–3 minutes until slightly softened.
  4. Add cheese and cream: Pour heavy cream (or add dollops of cream cheese) over the chicken, then sprinkle the shredded cheese evenly on top. Cover the skillet with a lid and let it cook for 3–5 minutes until the cheese melts and the chicken is fully cooked (internal temperature 165°F / 74°C).
  5. Garnish and serve: Sprinkle fresh parsley or cilantro on top before serving. Serve with rice, pasta, or a side salad for a complete meal.

Tips

  • For extra flavor, you can add a squeeze of lime juice or a pinch of chili flakes.
  • If you like it extra cheesy, add more cheese on top before serving.
