Chocolate Chip Cheesecake Cookies
Ingredients
For the Cookie Dough:
- ½ cup (1 stick) butter, softened
- ½ cup granulated sugar
- ½ cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 cup chocolate chips
For the Cheesecake Filling:
- 4 oz (½ cup) cream cheese, softened
- 2 tablespoons granulated sugar
- ½ teaspoon vanilla extract
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Make Cheesecake Filling:
- In a small bowl, beat the cream cheese, sugar, and vanilla extract until smooth. Set aside.
- Make Cookie Dough:
- In a large bowl, cream together butter, granulated sugar, and brown sugar until fluffy.
- Beat in the egg and vanilla extract.
- In another bowl, whisk together flour, baking soda, and salt. Gradually add to the butter mixture.
- Stir in chocolate chips.
- Assemble Cookies:
- Take about 1 tablespoon of cookie dough and flatten it in your hand.
- Place about 1 teaspoon of cheesecake filling in the center.
- Fold the cookie dough around the filling, sealing it completely, and roll into a ball.
- Place on the prepared baking sheet about 2 inches apart.
- Bake:
- Bake for 10–12 minutes, or until the edges are lightly golden but the centers are still soft.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
