Chocolate Chip Cheesecake Cookies

 Ingredients

For the Cookie Dough:

  • ½ cup (1 stick) butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup chocolate chips

For the Cheesecake Filling:

  • 4 oz (½ cup) cream cheese, softened
  • 2 tablespoons granulated sugar
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Make Cheesecake Filling:
    • In a small bowl, beat the cream cheese, sugar, and vanilla extract until smooth. Set aside.
  3. Make Cookie Dough:
    • In a large bowl, cream together butter, granulated sugar, and brown sugar until fluffy.
    • Beat in the egg and vanilla extract.
    • In another bowl, whisk together flour, baking soda, and salt. Gradually add to the butter mixture.
    • Stir in chocolate chips.
  4. Assemble Cookies:
    • Take about 1 tablespoon of cookie dough and flatten it in your hand.
    • Place about 1 teaspoon of cheesecake filling in the center.
    • Fold the cookie dough around the filling, sealing it completely, and roll into a ball.
    • Place on the prepared baking sheet about 2 inches apart.
  5. Bake:
    • Bake for 10–12 minutes, or until the edges are lightly golden but the centers are still soft.
    • Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

 Serving Suggestion

Serve slightly warm to enjoy the creamy cheesecake center, or store in an airtight container for up to 3 days. Perfect with a glass of milk or a cup of coffee!
