 Slow Cooker Ham & Potato Casserole

Cheesy, cozy, and effortless—just dump, cook, and enjoy!

 Ingredients

  • 30 oz frozen hash brown potatoes (cubed or shredded)
  • 1 can (10.75 oz) cream of chicken soup
  • 1 cup sour cream
  • 2 cups cooked ham, diced
  • 2 cups shredded cheddar cheese (or cheddar-jack blend)
  • ½ cup milk
  • ½ small onion, finely diced (optional)
  • 1 tsp garlic powder
  • ½ tsp black pepper
  • ½ tsp paprika
  • Salt to taste
  • 2 tbsp melted butter (optional, for extra richness)

 Instructions

  1. Spray the slow cooker with non-stick spray.
  2. In a large bowl, mix cream of chicken soup, sour cream, milk, garlic powder, pepper, paprika, and salt.
  3. Add hash browns, diced ham, onion (if using), and 1½ cups of the cheese. Stir well.
  4. Pour everything into the slow cooker and spread evenly.
  5. Cover and cook:
    • Low: 5–6 hours
    • High: 2½–3 hours
  6. About 20–30 minutes before serving, sprinkle the remaining ½ cup cheese on top. Cover until melted.
  7. Let rest 5–10 minutes, then serve warm

  • Add frozen peas or corn for a veggie boost
  • Swap ham for cooked chicken or turkey
