PINEAPPLE BBQ CHICKEN
Sweet, Tangy & Smoky Chicken with a Tropical Twist
Perfect for the grill or the oven—easy, juicy, and full of flavor
INGREDIENTS (SERVES 4)
- 4 boneless, skinless chicken breasts or thighs
- 1 cup pineapple juice
- 1/2 cup BBQ sauce (your favorite)
- 2 tablespoons soy sauce
- 2 tablespoons brown sugar
- 2 cloves garlic, minced
- 1/2 teaspoon smoked paprika
- Salt, to taste
- Black pepper, to taste
- 1 cup fresh pineapple chunks
Optional garnish:
- Chopped cilantro or green onions
PREPARE THE MARINADE
In a bowl, mix together:
pineapple juice, BBQ sauce, soy sauce, brown sugar, garlic, smoked paprika, salt, and black pepper until well combined.
MARINATE THE CHICKEN
- Place the chicken in a shallow dish or zip-top bag.
- Pour the marinade over the chicken, making sure it’s fully coated.
- Refrigerate for at least 30 minutes (up to 4 hours for deeper flavor).
COOK THE CHICKEN
GRILL METHOD
- Preheat grill to medium-high heat.
- Grill chicken 6–8 minutes per side, brushing with marinade.
- Cook until internal temperature reaches 165°F / 74°C.
OVEN METHOD
- Preheat oven to 400°F (200°C).
- Place chicken in a baking dish.
- Spoon a little marinade over the top.
- Bake for 25–30 minutes until fully cooked.
ADD THE PINEAPPLE
- During the last 5–7 minutes of cooking, add fresh pineapple chunks.
- Let them caramelize slightly for extra sweetness and color.
SERVE
- Serve chicken with caramelized pineapple on top or on the side.
- Garnish with chopped cilantro or green onions if desired.
