 Baked Sweet and Sour Chicken

 Ingredients

For the Chicken:

  • 2 lbs (900 g) boneless, skinless chicken breast, cut into chunks
  • Salt & black pepper, to taste
  • 1 cup cornstarch
  • 2 eggs, beaten
  • ¼ cup vegetable oil (for baking)

Sweet & Sour Sauce:

  • ¾ cup sugar
  • ½ cup apple cider vinegar (or white vinegar)
  • ¼ cup ketchup
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder

 Instructions

  1. Preheat oven to 325°F (165°C).
  2. Prepare the chicken
    • Season chicken with salt and pepper.
    • Coat chicken pieces in cornstarch.
    • Dip them into beaten eggs.
  3. Bake the chicken (first bake)
    • Heat oil in a baking dish in the oven until hot.
    • Carefully place chicken in the hot oil.
    • Bake for 30 minutes, turning once halfway.
  4. Make the sauce
    • In a bowl, whisk together sugar, vinegar, ketchup, soy sauce, and garlic powder.
  5. Bake again with sauce
    • Pour sauce evenly over the chicken.
    • Return to oven and bake 30 more minutes, stirring every 10 minutes to coat well.
  6. Serve hot
    • Best served with steamed rice or fried rice
    • You can add pineapple or bell peppers if you like.
