Baked Sweet and Sour Chicken
Ingredients
For the Chicken:
- 2 lbs (900 g) boneless, skinless chicken breast, cut into chunks
- Salt & black pepper, to taste
- 1 cup cornstarch
- 2 eggs, beaten
- ¼ cup vegetable oil (for baking)
Sweet & Sour Sauce:
- ¾ cup sugar
- ½ cup apple cider vinegar (or white vinegar)
- ¼ cup ketchup
- 1 tablespoon soy sauce
- 1 teaspoon garlic powder
Instructions
- Preheat oven to 325°F (165°C).
- Prepare the chicken
- Season chicken with salt and pepper.
- Coat chicken pieces in cornstarch.
- Dip them into beaten eggs.
- Bake the chicken (first bake)
- Heat oil in a baking dish in the oven until hot.
- Carefully place chicken in the hot oil.
- Bake for 30 minutes, turning once halfway.
- Make the sauce
- In a bowl, whisk together sugar, vinegar, ketchup, soy sauce, and garlic powder.
- Bake again with sauce
- Pour sauce evenly over the chicken.
- Return to oven and bake 30 more minutes, stirring every 10 minutes to coat well.
- Serve hot
- Best served with steamed rice or fried rice
- You can add pineapple or bell peppers if you like.
