Crispy Halloumi Crunch Wraps with Pomegranate & Mint Yogurt
Ingredients
For the Halloumi:
8 oz halloumi cheese, sliced into ½-inch / 1.25 cm strips (225 g)
2 tablespoons olive oil (30 ml)
½ teaspoon smoked paprika (1 g)
Salt and black pepper, to taste
For the Wraps:
4 large flour tortillas (about 10-inch / 25 cm)
1 cup shredded lettuce (50 g)
1 small cucumber, thinly sliced (100 g)
½ cup shredded carrots (50 g)
½ cup pomegranate seeds (75 g)
For the Mint Yogurt:
½ cup Greek yogurt (120 g / 120 ml)
2 tablespoons fresh mint, chopped (8 g)
1 teaspoon lemon juice (5 ml)
Pinch of salt
Optional Garnish:
Extra mint leaves
Drizzle of olive oil
Directions
Whisk together Greek yogurt, chopped mint, lemon juice, and pinch of salt to make mint yogurt sauce. Set aside.
Heat olive oil in a skillet over medium heat. Toss halloumi slices with smoked paprika, salt, and pepper. Fry halloumi for 2–3 minutes per side until golden and crispy.
Warm tortillas in a dry skillet or microwave.
Assemble wraps: layer lettuce, cucumber, shredded carrots, and fried halloumi on each tortilla. Drizzle with mint yogurt and sprinkle pomegranate seeds. Fold into wraps and serve immediately.
