Chocolate-Covered Brownie Bars
Ingredients
For the Brownie Layer
- 1 cup (225 g) unsalted butter, melted
- 1 cup granulated sugar
- 1 cup brown sugar
- 4 large eggs
- 1 tbsp vanilla extract
- 1 cup all-purpose flour
- 1 cup unsweetened cocoa powder
- ½ tsp salt
- ½ tsp baking powder
For the Chocolate Coating
- 2 cups semi-sweet chocolate chips
- 2 tbsp vegetable oil or coconut oil
Instructions
1. Prepare the Brownies
Preheat oven to 350°F (175°C).
Line a 9×13-inch baking pan with parchment paper.
In a large bowl, whisk melted butter with granulated sugar and brown sugar until smooth.
Add eggs one at a time, mixing well after each.
Stir in vanilla extract.
In a separate bowl, mix flour, cocoa powder, salt, and baking powder.
Gradually add dry ingredients to the wet mixture and mix until just combined.
Pour batter into prepared pan and spread evenly.
Bake for 22–25 minutes, or until a toothpick inserted comes out with a few moist crumbs.
Let cool completely.
2. Cut the Bars
Once cooled, lift brownies out using parchment paper.
Cut into even rectangular bars.
3. Chocolate Coating
In a microwave-safe bowl, melt chocolate chips with oil in 30-second intervals, stirring until smooth.
Dip each brownie bar into the melted chocolate or spoon chocolate over the bars to coat completely.
Place coated bars on a parchment-lined tray.
4. Set & Serve
Refrigerate for 20–30 minutes until chocolate is set.
Serve at room temperature or chilled.
Tips
- For extra richness, add ½ cup chocolate chips to the brownie batter
- Sprinkle with sea salt before chocolate sets
- Store in an airtight container up to 5 days
