 Mediterranean Spiced Chicken Pita Pockets

Juicy spiced chicken tucked into warm pita with crisp veggies and creamy sauce.

Ingredients

Spiced Chicken

1½ lbs chicken breast or thighs, sliced

2 tbsp olive oil

1 tsp paprika

1 tsp ground cumin

1 tsp ground coriander

½ tsp garlic powder

½ tsp oregano

½ tsp turmeric

Salt & black pepper

Pita & Fillings

4–6 pita breads, warmed

1 cup chopped cucumber

1 cup diced tomatoes

½ cup red onion, thinly sliced

Shredded lettuce

Crumbled feta cheese

Creamy Sauce (Tzatziki Style)

1 cup Greek yogurt

1 tbsp olive oil

1 tbsp lemon juice

1 clove garlic, grated

1 tbsp chopped dill or parsley

Salt, to taste

Instructions

Season chicken:
Toss chicken with olive oil, spices, salt, and pepper.

Cook chicken:
Grill or pan-sear over medium-high heat 5–7 minutes until golden and cooked through.

Make sauce:
Mix all sauce ingredients until smooth.

Assemble pitas:
Fill warm pita with chicken, veggies, feta, and a generous drizzle of sauce.
