Homemade Hush Puppies
Ingredients:
- 1 box Jiffy Corn Muffin Mix
- ½ cup onion, finely grated
- 1 large egg
- ⅓ cup milk (add a little more if batter is too thick)
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp garlic powder (optional)
- ¼ tsp sugar (optional, for a slightly sweet touch)
- Vegetable oil, for frying
Instructions:
- In a bowl, combine the Jiffy mix, grated onion, egg, and milk.
- Add salt, pepper, and any optional seasonings. Mix just until combined
(don’t overmix — batter should be thick but scoopable). - Heat about 2–3 inches of oil in a deep skillet or pot to 350°F (175°C).
- Drop batter by tablespoonfuls into the hot oil.
- Fry for 2–3 minutes, turning occasionally, until golden brown.
- Remove and drain on paper towels.
Serving Ideas:
- Serve hot with fried fish, shrimp, or barbecue
- Dip in honey butter, remoulade, or spicy mayo
Tip: For extra Southern flavor, you can add a pinch of cayenne pepper or a spoon of corn kernels.
