Mini Meatloaf Muffins with Mashed Potato Frosting

These adorable mini meatloaves are baked in a muffin tin and topped with creamy mashed potatoes like frosting. Fun, comforting, and perfect for family dinners or parties!

Ingredients

Meatloaf Muffins

  • 1 lb (450 g) ground beef
  • 1/2 cup breadcrumbs
  • 1/3 cup milk
  • 1 large egg
  • 1/2 small onion, finely diced
  • 2 cloves garlic, minced
  • 1/4 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon dried Italian seasoning

Mashed Potato Frosting

  • 2 lbs (900 g) potatoes, peeled and cubed
  • 4 tablespoons butter
  • 1/3 cup milk or cream (warm)
  • Salt, to taste

Optional Topping

  • Chopped parsley
  • Shredded cheddar cheese

Instructions

  1. Preheat the oven
    Preheat oven to 375°F (190°C). Lightly grease a muffin tin.
  2. Prepare the meatloaf mixture
    In a large bowl, combine ground beef, breadcrumbs, milk, egg, onion, garlic, ketchup, Worcestershire sauce, salt, pepper, paprika, and Italian seasoning. Mix gently until just combined.
  3. Fill the muffin tin
    Divide the mixture evenly among the muffin cups, pressing lightly.
  4. Bake
    Bake for 20–25 minutes, or until fully cooked and lightly browned. Remove from oven and let rest 5 minutes.
  5. Make the mashed potatoes
    Boil potatoes in salted water until fork-tender. Drain, then mash with butter, warm milk, and salt until smooth and creamy.
  6. Frost and serve
    Spoon or pipe mashed potatoes on top of each meatloaf muffin. Garnish with parsley or cheese if desired.

Serve with green beans, roasted carrots, or a simple salad for a complete comfort-food meal
