Amish Snow Day Soup

A cozy, hearty soup perfect for cold winter days

This classic Amish-style soup is rich, comforting, and incredibly filling—exactly the kind of meal you make when snow keeps everyone at home. Simple ingredients, slow-simmered flavor, and pure comfort in every spoonful.

 Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 3 cups potatoes, peeled and diced
  • 2 cups carrots, sliced
  • 2 cups celery, chopped
  • 4 cups beef broth
  • 1 cup water
  • 1 tsp salt (or to taste)
  • ½ tsp black pepper
  • 1 tsp dried parsley
  • ½ tsp paprika

Creamy Finish

  • 2 cups whole milk
  • 2 tbsp butter
  • 2 tbsp all-purpose flour

 Instructions

  1. Brown the beef
    In a large pot over medium heat, cook the ground beef with the diced onion until browned. Drain excess fat if needed. Add garlic and cook for 30 seconds.
  2. Add vegetables & broth
    Stir in potatoes, carrots, celery, beef broth, water, salt, pepper, parsley, and paprika.
  3. Simmer
    Bring to a gentle boil, then reduce heat and simmer uncovered for 20–25 minutes, or until vegetables are tender.
  4. Make it creamy
    In a small saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute. Slowly whisk in milk until smooth and slightly thickened.
  5. Combine & finish
    Pour the milk mixture into the soup and stir well. Simmer for another 5–10 minutes until creamy and heated through.

 Tips & Variations

  • Add corn or green beans for extra heartiness
  • Use ground turkey instead of beef for a lighter version
  • Serve with crusty bread or homemade rolls
