 Strawberry Crunch Cheesecake Bites

 Ingredients

For the Crust:

  • 1 ½ cups crushed golden sandwich cookies (Golden Oreos or similar)
  • ¼ cup melted butter

For the Cheesecake Filling:

  • 8 oz (225 g) cream cheese, softened
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream (cold)

For the Strawberry Crunch Topping:

  • 1 cup crushed golden sandwich cookies
  • ½ cup crushed strawberry-flavored cookies or strawberry wafers
  • 3 tbsp melted butter

Optional Garnish:

  • Fresh strawberries
  • White chocolate drizzle

 Instructions

1️⃣ Prepare the Crust

  • Mix crushed cookies with melted butter until combined.
  • Press the mixture firmly into mini muffin liners or a lined baking dish.
  • Chill in the fridge for 15–20 minutes.

Make the Cheesecake Filling

  • Beat cream cheese until smooth.
  • Add powdered sugar and vanilla; mix well.
  • In a separate bowl, whip heavy cream until stiff peaks form.
  • Gently fold whipped cream into the cream cheese mixture.

 Assemble

  • Spoon or pipe cheesecake filling over the chilled crust.
  • Smooth the tops and refrigerate for at least 2 hours (or freeze 1 hour for quicker set).

 Strawberry Crunch Topping

  • Mix crushed cookies, strawberry cookies, and melted butter until crumbly.
  • Sprinkle generously over the cheesecake bites.

 Serve

  • Garnish with strawberries or drizzle with melted white chocolate if desired.
  • Serve chilled and enjoy

 Tips

  • For extra strawberry flavor, mix 2 tbsp strawberry jam into the cheesecake filling.
  • These keep well in the fridge for up to 3 days.
  • Perfect for parties, Ramadan desserts, or bite-sized treats.
