- 1 medium onion, thinly sliced
- 2 cups egg noodles (uncooked)
- 1 can (10.5 oz) French onion soup
- 1 cup beef broth
- 1 cup sour cream
- 1½ cups shredded mozzarella or Swiss cheese (or a mix)
- ½ cup grated Parmesan cheese
- 2 tablespoons butter
- 1 teaspoon garlic powder
- ½ teaspoon black pepper
- Salt, to taste
- Optional: fresh parsley or thyme for garnish
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- Cook the noodles according to package directions until just al dente. Drain and set aside.
- Caramelize the onions:
In a large skillet over medium heat, melt the butter. Add sliced onions and cook slowly for 10–12 minutes, stirring often, until soft and golden brown. Remove and set aside. - Brown the beef:
In the same skillet, add ground beef and cook until browned. Drain excess fat. Season with garlic powder, black pepper, and a little salt. - Make the sauce:
Stir the French onion soup, beef broth, sour cream, and caramelized onions into the beef. Mix well and simmer for 2–3 minutes. - Combine:
Add cooked noodles to the skillet and gently mix until everything is well coated. - Assemble:
Transfer the mixture to the prepared baking dish. Sprinkle mozzarella (or Swiss) and Parmesan evenly over the top. - Bake:
Cover loosely with foil and bake for 20 minutes. Uncover and bake an additional 10 minutes, or until bubbly and golden. - Rest & serve:
Let sit for 5 minutes before serving. Garnish with parsley or thyme if desired.
