Cheesy Ranch Potatoes and Smoked Sausage

This easy one-pan comfort meal is loaded with tender potatoes, smoky sausage, creamy ranch flavor, and melty cheese. Perfect for busy weeknights or cozy family dinners!

 Ingredients

  • 1 pound smoked sausage, sliced into rounds
  • 6–8 medium potatoes, diced (Yukon Gold or Russet work best)
  • 2 tablespoons olive oil
  • 1 packet (1 oz) ranch seasoning mix
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika
  • Salt and black pepper, to taste
  • 1½–2 cups shredded cheddar cheese (or cheddar-mozzarella blend)
  • ¼ cup milk or heavy cream (optional, for extra creaminess)
  • 2 tablespoons butter, cut into small pieces
  • Fresh parsley or green onions, chopped (optional, for garnish)

 Instructions

  1. Preheat Oven
Preheat your oven to 400°F (200°C). Lightly grease a large baking dish or sheet pan.
  2. Prepare the Potatoes
In a large bowl, toss the diced potatoes with olive oil, ranch seasoning, garlic powder, onion powder, paprika, salt, and pepper until evenly coated.
  3. Assemble the Dish
Spread the seasoned potatoes evenly in the baking dish. Scatter the sliced smoked sausage over the top. Dot with butter.
  4. Bake
Cover loosely with foil and bake for 35–40 minutes, stirring once halfway through, until the potatoes are tender.
  5. Add Cheese
Remove the foil, drizzle milk or cream if using, then sprinkle the shredded cheese evenly over the top.
  6. Finish Baking
Return to the oven uncovered and bake for 10–15 minutes, until the cheese is melted, bubbly, and lightly golden.
  7. Garnish & Serve
Garnish with fresh parsley or green onions if desired. Serve hot and enjoy!

Tips & Variations

  • Add bell peppers or onions for extra flavor
  • Use spicy smoked sausage for a kick
  • Swap cheddar for pepper jack or Colby-Jack
  • Make it creamy by stirring in ¼ cup sour cream before adding cheese
