 Ingredients

  • 4 tablespoons butter
  • 1 small onion, finely chopped
  • 1 carrot, finely diced
  • 1 celery stalk, finely diced
  • 3 tablespoons all-purpose flour
  • 3 cups chicken broth (or vegetable broth)
  • 2 cups whole milk (or half-and-half for extra richness)
  • 2½ cups sharp Canadian cheddar cheese, freshly shredded
  • ½ teaspoon dry mustard (optional but traditional)
  • ½ teaspoon paprika
  • Salt and black pepper, to taste
  • ¼ teaspoon cayenne pepper (optional, for heat)

 Instructions

  1. Sauté the vegetables
