The Best Skillet T-Bone Steak

 Ingredients

  • 2 T-bone steaks (about 1–1.5 inches thick)
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 3–4 cloves garlic, smashed
  • 2–3 sprigs fresh rosemary or thyme
  • Salt and freshly ground black pepper, to taste

 Instructions

  1. Prep the Steak:
    • Remove steaks from the fridge 30–60 minutes before cooking to bring to room temperature.
    • Pat them dry with paper towels to get a good sear.
    • Generously season both sides with salt and black pepper.
  2. Heat the Skillet:
    • Place a heavy skillet (preferably cast iron) over high heat.
    • Add olive oil and heat until shimmering but not smoking.
  3. Sear the Steak:
    • Carefully place steaks in the hot skillet.
    • Sear without moving for 3–4 minutes until a deep brown crust forms.
    • Flip and sear the other side for another 3–4 minutes.
  4. Add Butter & Aromatics:
    • Reduce heat to medium.
    • Add butter, garlic, and rosemary/thyme to the skillet.
    • Tilt the skillet slightly and spoon the melted butter over the steaks repeatedly (basting) for 1–2 minutes.
  5. Check Doneness:
    • For medium-rare: cook to internal temp 130–135°F (54–57°C).
    • For medium: 140–145°F (60–63°C).
    • Use a meat thermometer for accuracy.
  6. Rest the Steak:
    • Transfer steaks to a cutting board.
    • Tent loosely with foil and let rest for 5–10 minutes to lock in juices.
  7. Serve:
    • Slice against the grain if desired.
    • Drizzle with the garlic-herb butter from the skillet.
    • Serve with your favorite sides: roasted veggies, mashed potatoes, or a crisp salad.
