Chicken Bacon Ranch Quesadillas
Ingredients:
- 2 cups cooked, shredded chicken
- 6 slices bacon, cooked and crumbled
- 1 cup shredded cheddar cheese
- ½ cup shredded mozzarella or Monterey Jack cheese
- ¼ cup ranch dressing
- 4 large flour tortillas
- 1 tablespoon butter or oil (for cooking)
- Optional: chopped green onions or parsley for garnish
Instructions:
- In a bowl, mix the shredded chicken, crumbled bacon, ranch dressing, and half of the cheeses.
- Heat a skillet over medium heat and lightly butter or oil it.
- Place one tortilla in the skillet. Sprinkle a little cheese, add a generous amount of the chicken mixture, then top with more cheese.
- Cover with another tortilla (or fold if using one tortilla).
- Cook 2–3 minutes per side until golden brown and the cheese is fully melted.
- Remove from the skillet, let rest 1 minute, then cut into wedges.
- Garnish with green onions if desired and serve warm.
