Chicken Bacon Ranch Quesadillas 

 

Ingredients:

  • 2 cups cooked, shredded chicken
  • 6 slices bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella or Monterey Jack cheese
  • ¼ cup ranch dressing
  • 4 large flour tortillas
  • 1 tablespoon butter or oil (for cooking)
  • Optional: chopped green onions or parsley for garnish

Instructions:

  1. In a bowl, mix the shredded chicken, crumbled bacon, ranch dressing, and half of the cheeses.
  2. Heat a skillet over medium heat and lightly butter or oil it.
  3. Place one tortilla in the skillet. Sprinkle a little cheese, add a generous amount of the chicken mixture, then top with more cheese.
  4. Cover with another tortilla (or fold if using one tortilla).
  5. Cook 2–3 minutes per side until golden brown and the cheese is fully melted.
  6. Remove from the skillet, let rest 1 minute, then cut into wedges.
  7. Garnish with green onions if desired and serve warm.
