Ingredients:

  • 1 box (15.25 oz) strawberry cake mix
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 4 oz cream cheese, softened
  • 1/2 teaspoon vanilla extract
  • 1/2 cup white chocolate chips (optional but recommended)
  • Powdered sugar, for rolling (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C).
    Line a baking sheet with parchment paper.
  2. In a large bowl, beat the softened cream cheese until smooth and creamy.
  3. Add the eggs, vegetable oil, and vanilla extract. Mix well until fully combined.
  4. Gradually add the strawberry cake mix and stir until a soft, slightly sticky dough forms.
  5. Fold in the white chocolate chips if using.
  6. Scoop the dough using a tablespoon or cookie scoop.
    (Optional) Roll each dough ball lightly in powdered sugar for a crackled look.
  7. Place cookies on the prepared baking sheet, leaving about 2 inches between each.
  8. Bake for 10–12 minutes, or until the edges are set but the centers are still soft.
  9. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
