 Ingredients

Chicken & Garlic Cream Sauce

  • 8 skinless, boneless chicken thighs
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil
  • 4 garlic cloves, finely chopped
  • 1 tablespoon butter
  • 200 ml (¾ cup) heavy cream
  • 30 g (¼ cup) grated Parmesan cheese
  • 1 teaspoon Italian seasoning or dried thyme
  • Fresh parsley, chopped (for garnish)

Crispy Roasted Baby Potatoes

  • 500 g (1 lb) baby potatoes, halved
  • 1½ tablespoons olive oil
  • Salt and black pepper, to taste
  • Optional: chopped fresh parsley for garnish

 Instructions

1. Roast the Potatoes

  1. Preheat the oven to 200°C (400°F).
  2. Toss the halved baby potatoes with olive oil, salt, and pepper.
  3. Arrange them cut-side down on a baking tray.
  4. Roast for 30–35 minutes, or until golden, crispy, and tender inside.

2. Cook the Chicken

  1. Season the chicken thighs generously with salt and black pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Sear the chicken for 5–6 minutes per side, until well browned and fully cooked.
  4. Remove the chicken from the pan and set aside.

3. Make the Garlic Cream Sauce

  1. Reduce the heat to medium.
  2. In the same skillet, melt the butter.
  3. Add the chopped garlic and sauté for about 1 minute, until fragrant (do not brown).
  4. Pour in the heavy cream, then stir in Parmesan cheese and Italian seasoning.
  5. Let the sauce simmer for 3–4 minutes, stirring gently, until slightly thickened.

4. Combine & Finish

  1. Return the chicken to the skillet.
  2. Spoon the creamy garlic sauce over the chicken.
  3. Simmer for 3–4 minutes to allow the flavors to blend.
  4. Garnish with freshly chopped parsley.

 Serving Suggestions

Serve the garlic cream chicken hot alongside the crispy roasted baby potatoes.
Add a simple green salad or steamed vegetables for a complete meal.
