Ingredients
Chicken & Garlic Cream Sauce
- 8 skinless, boneless chicken thighs
- Salt and freshly ground black pepper, to taste
- 2 tablespoons olive oil
- 4 garlic cloves, finely chopped
- 1 tablespoon butter
- 200 ml (¾ cup) heavy cream
- 30 g (¼ cup) grated Parmesan cheese
- 1 teaspoon Italian seasoning or dried thyme
- Fresh parsley, chopped (for garnish)
Crispy Roasted Baby Potatoes
- 500 g (1 lb) baby potatoes, halved
- 1½ tablespoons olive oil
- Salt and black pepper, to taste
- Optional: chopped fresh parsley for garnish
Instructions
1. Roast the Potatoes
- Preheat the oven to 200°C (400°F).
- Toss the halved baby potatoes with olive oil, salt, and pepper.
- Arrange them cut-side down on a baking tray.
- Roast for 30–35 minutes, or until golden, crispy, and tender inside.
2. Cook the Chicken
- Season the chicken thighs generously with salt and black pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Sear the chicken for 5–6 minutes per side, until well browned and fully cooked.
- Remove the chicken from the pan and set aside.
3. Make the Garlic Cream Sauce
- Reduce the heat to medium.
- In the same skillet, melt the butter.
- Add the chopped garlic and sauté for about 1 minute, until fragrant (do not brown).
- Pour in the heavy cream, then stir in Parmesan cheese and Italian seasoning.
- Let the sauce simmer for 3–4 minutes, stirring gently, until slightly thickened.
4. Combine & Finish
- Return the chicken to the skillet.
- Spoon the creamy garlic sauce over the chicken.
- Simmer for 3–4 minutes to allow the flavors to blend.
- Garnish with freshly chopped parsley.
