Spinach and Cheese Puff Pastry Square
Description
These Spinach and Cheese Puff Pastry Squares are crispy on the outside and creamy on the inside. Made with flaky puff pastry and a rich spinach-cheese filling, they are perfect as an appetizer, snack, or light meal. Easy to prepare and oven-baked to golden perfection.
Ingredients
For the Filling:
300 g fresh spinach (or frozen spinach, well drained)
200 g ricotta cheese (or cream cheese)
100 g feta cheese, crumbled
1 egg
2 cloves garlic, minced
Salt, to taste
Black pepper, to taste
Nutmeg (optional)
1–2 tablespoons olive oil
For the Pastry:
2 sheets puff pastry
1 egg yolk (for brushing)
Sesame seeds (optional)
Instructions
Prepare the Spinach
Heat olive oil in a pan over medium heat.
Add garlic and sauté for a few seconds until fragrant.
Add spinach and cook until wilted.
Remove from heat and let cool completely, then squeeze out excess liquid.
Make the Filling
In a bowl, combine spinach, ricotta cheese, feta cheese, egg, salt, pepper, and nutmeg.
Mix well until creamy and evenly combined.
Assemble the Pastry
Preheat oven to 180°C (350°F).
Line a baking tray with parchment paper.
Place one sheet of puff pastry on the tray.
Spread the spinach mixture evenly over it, leaving a small border.
Cover and Seal
Place the second puff pastry sheet on top.
Press edges gently and seal with a fork.
Cut the pastry into squares using a knife.
Brush and Bake
Brush the top with egg yolk.
Sprinkle with sesame seeds if desired.
Bake for 30–35 minutes or until golden brown and puffed.
Serve
Let cool slightly, then separate the squares and serve warm.
Tips & Serving Suggestions
Make sure the spinach is very well drained to avoid soggy pastry.
You can replace feta with mozzarella or grated cheese if preferred.
Serve with yogurt sauce, salad, or soup.
