What You Need:
Chicken:
500g chicken breast/thigh, diced
1 tbsp olive oil
1 tsp garlic powder
1 tsp paprika

Creamy Sauce:
200ml heavy cream
2 minced garlic cloves
1 tsp Dijon mustard
1 tsp dried thyme or herb blend
Salt to taste
Roasted Sides:
500g baby potatoes, halved
1 tbsp oil
Cherry tomatoes
Fresh parsley
Step-by-Step:
Roast potatoes: Toss with oil, salt, pepper. Roast at 200°C for 25–30 min until crispy.
Cook chicken: In a hot pan, sear seasoned chicken until golden and fully cooked. Remove.
Make the cream sauce: Sauté garlic, then stir in cream, mustard, herbs. Let simmer.
Toss chicken in sauce: Add cooked chicken to the sauce and let it coat and heat through.
Assemble: In a tray or plate, combine the creamy chicken with roasted potatoes and blistered cherry tomatoes. Garnish with chopped parsley.
