Grilled Steak & Shrimp kabob
Ingredients:
For the Kabobs:
1 lb sirloin or ribeye steak, cut into 1-inch cubes
1 lb large shrimp, peeled and deveined
1 red bell pepper, cut into 1-inch chunks
1 yellow bell pepper, cut into 1-inch chunks
1 medium red onion, cut into wedges
1 zucchini, sliced into thick rounds
2 tbsp olive oil
Salt and pepper to taste
1 tsp garlic powder
1 tsp paprika
1/2 tsp onion powder
1/2 tsp dried oregano
For the Marinade:
1/4 cup olive oil
2 tbsp soy sauce
2 tbsp fresh lemon juice
2 cloves garlic, minced
1 tbsp fresh parsley, chopped
1 tsp honey (optional, for sweetness)
Salt and pepper to taste
Preparation:
Marinate the Steak and Shrimp:
In a small bowl, whisk together olive oil, soy sauce, lemon juice, minced garlic, parsley, honey (if using), salt, and pepper.
Place the steak cubes in a resealable bag or shallow dish and pour half of the marinade over the steak. Do the same with the shrimp in a separate bag or dish. Seal both bags or cover the dishes and refrigerate for 30 minutes to 1 hour to marinate.
Prepare the Vegetables:
While the meat is marinating, prep your vegetables: slice the peppers, onion, and zucchini into 1-inch chunks or thick rounds.
Assemble the Kabobs:
Thread the marinated steak, shrimp, and vegetables onto skewers, alternating between the meat and vegetables. Be sure to leave a little space between each ingredient for even cooking.
Grill the Kabobs:
Preheat the grill to medium-high heat.
Brush the kabobs lightly with olive oil and season with salt, pepper, garlic powder, paprika, onion powder, and dried oregano.
Place the kabobs on the grill and cook for 2-3 minutes per side for the shrimp (until pink and opaque) and 4-5 minutes per side for the steak (depending on your desired doneness). Turn the kabobs every 2-3 minutes to ensure even cooking.
Serve:
Once cooked, remove the kabobs from the grill. Serve immediately with your favorite side dishes like rice, grilled vegetables, or a fresh salad.
