Cabbage Fat-Burning Soup
A light, warming and veggie-packed soup that’s filling, healthy and perfect for meal prep or a cosy bowl on chilly days.
Ingredients
1 large onion, chopped
2 large carrots, sliced
3 celery sticks, chopped
2 peppers (any colour), chopped
1 medium white cabbage, chopped
1 × 400g tin chopped tomatoes
1.5 litres vegetable stock
1–2 garlic cloves, finely chopped
Salt and black pepper, to taste
Optional herbs: parsley, thyme or mixed herbs
Method
1. Prepare the veg
Chop the onion, carrots, celery, peppers and cabbage into bite-sized pieces. Finely chop the garlic.
2. Soften the base
Lightly spray or drizzle a little oil into a large saucepan and heat over a medium heat.
Add the onion and garlic and cook for 2–3 minutes until fragrant and softened.
3. Add the vegetables
Add the carrots, celery and peppers. Cook for 5 minutes, stirring now and then.
4. Add cabbage and tomatoes
Stir in the cabbage and the tin of chopped tomatoes.
5. Add the stock
Pour in the vegetable stock so everything is well covered. Bring to the boil.
6. Simmer
Reduce to a gentle simmer and cook for 25–30 minutes, until all the vegetables are soft.
7. Season and serve
Season with salt, black pepper and herbs if you like. Serve hot.
