Golden Corn Ranch Beef Skillet with Melted Cheddar Blis

This comforting one-pan skillet dinner is packed with juicy beef, sweet corn, creamy ranch flavor, and loads of melted cheddar. Perfect for busy weeknights and guaranteed to please the whole family!
Ingredients
1 lb ground beef
1 small onion, diced
3 cloves garlic, minced
1 (15 oz) can whole kernel corn, drained (or 1½ cups frozen corn)
1 (10.5 oz) can cream of mushroom soup (or cream of chicken)
½ cup sour cream
1 packet ranch seasoning mix (about 1 oz)
1½ cups shredded cheddar cheese (sharp or mild)
½ teaspoon black pepper
½ teaspoon paprika (optional, for warmth)
Salt, to taste
2 tablespoons olive oil or butter
Fresh parsley or green onions, chopped (optional garnish)
Instructions
1. Cook the beef
Heat olive oil or butter in a large skillet over medium heat. Add the ground beef and cook until browned, breaking it apart as it cooks.
2. Add onion & garlic
Stir in the diced onion and cook for 3–4 minutes until softened. Add the minced garlic and cook for 30 seconds until fragrant.
3. Season & add corn
Sprinkle in the ranch seasoning, black pepper, paprika, and a pinch of salt. Add the corn and stir well to combine.
4. Make it creamy
Lower the heat and stir in the cream of mushroom soup and sour cream until everything is smooth and creamy.
5. Add the cheese
Sprinkle the shredded cheddar evenly over the skillet. Cover with a lid and let it melt for 2–3 minutes.
6. Finish & garnish
Remove from heat once the cheese is melted and bubbly. Garnish with chopped parsley or green onions if desired.
