Baked Blueberry Fritter Bite
Ingredients:
– For the Fritter Batter:
– 1 ½ cups all-purpose flour
– 2 teaspoons baking powder
– ¼ teaspoon baking soda
– ½ teaspoon salt
– 1/2 cup granulated sugar
– 1/2 cup whole milk
– 1 large egg
– 2 tablespoons melted butter
– 1 teaspoon vanilla extract
– 1 cup fresh or frozen blueberries
– For the Glaze:
– 1 cup powdered sugar
– 2-3 tablespoons milk
– 1/2 teaspoon vanilla extract
Instructions:
1. Preheat oven to 375°F (190°C). Grease a mini muffin tin with cooking spray.
2. In a large bowl, whisk together flour, baking powder, baking soda, and salt.
3. In another bowl, whisk together sugar, milk, egg, melted butter, and vanilla extract.
4. Add wet ingredients to dry ingredients and stir until just combined. Do not overmix.
5. Gently fold in blueberries.
6. Spoon batter into mini muffin tin, filling each cup about 3/4 full.
7. Bake for 15-18 minutes or until golden brown.
8. While fritters are baking, prepare the glaze. Whisk together powdered sugar, milk, and vanilla extract until smooth.
9. Remove fritters from oven and let cool for 5 minutes.
10. Dip tops of fritters in glaze or drizzle with glaze.
11. Serve warm and enjoy!
