Ingredients:

– 1 cup unsalted butter, softened

– 1 1/4 cups brown sugar, packed

– 1 large egg

– 1 teaspoon vanilla extract

– 2 cups all-purpose flour

– 1 teaspoon baking soda

– 1/2 teaspoon salt

– 2 teaspoons ground cinnamon

– 1/2 teaspoon ground nutmeg (optional)

– 1/4 cup granulated sugar (for rolling)

Directions:

1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

2. In a large bowl, cream together the softened butter and brown sugar until light and fluffy.

3. Beat in the egg and vanilla extract until well combined.

4. In a separate bowl, whisk together the flour, baking soda, salt, ground cinnamon, and nutmeg.

5. Gradually add the dry ingredients to the butter mixture, mixing until just combined.

6. Shape the dough into 1-inch balls. Roll each ball in granulated sugar and place on the prepared baking sheet about 2 inches apart.

7. Bake for 10-12 minutes, or until the edges are golden and the centers are set.

8. Remove from oven and let cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
