Loaded Broccoli Cauliflower Salad (Low Carb)
This is the only salad everyone asks for
Ingredients
- 2 cups fresh broccoli florets, chopped
- 2 cups fresh cauliflower florets, chopped
- ½ cup shredded cheddar cheese
- ½ cup shredded mozzarella cheese (optional)
- ½ cup cooked bacon, crumbled
- ¼ cup red onion, finely chopped
- 2 tablespoons fresh parsley or green onions, chopped (optional)
Dressing
- ¾ cup mayonnaise
- 2 tablespoons apple cider vinegar or lemon juice
- 1 teaspoon mustard (optional)
- Salt, to taste
- Black pepper, to taste
- A pinch of garlic powder (optional)
Instructions
- In a large bowl, combine the broccoli and cauliflower.
- Add the cheddar cheese, mozzarella (if using), bacon, red onion, and parsley.
- In a separate bowl, whisk together all the dressing ingredients until smooth.
- Pour the dressing over the salad and toss gently until everything is well coated.
- Cover and refrigerate for at least 30 minutes before serving for best flavor.
