 Loaded Broccoli Cauliflower Salad (Low Carb)

This is the only salad everyone asks for

Ingredients

  • 2 cups fresh broccoli florets, chopped
  • 2 cups fresh cauliflower florets, chopped
  • ½ cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese (optional)
  • ½ cup cooked bacon, crumbled
  • ¼ cup red onion, finely chopped
  • 2 tablespoons fresh parsley or green onions, chopped (optional)

Dressing

  • ¾ cup mayonnaise
  • 2 tablespoons apple cider vinegar or lemon juice
  • 1 teaspoon mustard (optional)
  • Salt, to taste
  • Black pepper, to taste
  • A pinch of garlic powder (optional)

Instructions

  1. In a large bowl, combine the broccoli and cauliflower.
  2. Add the cheddar cheese, mozzarella (if using), bacon, red onion, and parsley.
  3. In a separate bowl, whisk together all the dressing ingredients until smooth.
  4. Pour the dressing over the salad and toss gently until everything is well coated.
  5. Cover and refrigerate for at least 30 minutes before serving for best flavor.

Notes

  • Low carb & keto-friendly
  • Add avocado or hard-boiled eggs for extra richness
  • Best served cold
