French Onion Beef and Noodles

Rich, cozy comfort food with tender beef, caramelized onion flavor, and hearty noodles—perfect for a satisfying dinner.

Ingredients

  • 2 tablespoons olive oil
  • 1 pound beef stew meat (cut into bite-size pieces)
  • Salt and black pepper, to taste
  • 1 large onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 packet (1 oz) French onion soup mix
  • 2 cups beef broth
  • 1 cup water
  • 1 tablespoon Worcestershire sauce
  • 8 oz egg noodles
  • ½ cup sour cream
  • ½ cup shredded mozzarella or Swiss cheese (optional, for extra creaminess)
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Brown the beef:
    Heat olive oil in a large skillet or Dutch oven over medium-high heat. Season beef with salt and pepper, then brown on all sides. Remove beef and set aside.
  2. Cook the onions:
    In the same pan, add sliced onions. Cook over medium heat for 8–10 minutes until soft and lightly caramelized. Add garlic and cook 30 seconds until fragrant.
  3. Build the sauce:
    Return beef to the pan. Stir in the French onion soup mix, beef broth, water, and Worcestershire sauce. Bring to a gentle boil.
  4. Simmer:
    Reduce heat to low, cover, and simmer for 30–40 minutes, until beef is tender.
  5. Cook the noodles:
    Add egg noodles directly to the pan. Stir, cover, and cook 8–10 minutes, stirring occasionally, until noodles are tender and most of the liquid is absorbed.
  6. Make it creamy:
    Lower heat and stir in sour cream and cheese (if using) until smooth and creamy.
  7. Serve:
    Taste and adjust seasoning. Garnish with parsley if desired and serve hot.

Tips & Variations

  • Slow cooker: Brown beef first, then add everything except noodles and sour cream. Cook on LOW 6–7 hours. Add noodles in the last 30 minutes, then stir in sour cream.
  • Extra cheesy: Add provolone or Gruyère for a true French onion vibe.
  • No sour cream: Substitute heavy cream or cream cheese.
