French Onion Beef and Noodles

Ingredients
- 2 tablespoons olive oil
- 1 pound beef stew meat (cut into bite-size pieces)
- Salt and black pepper, to taste
- 1 large onion, thinly sliced
- 3 cloves garlic, minced
- 1 packet (1 oz) French onion soup mix
- 2 cups beef broth
- 1 cup water
- 1 tablespoon Worcestershire sauce
- 8 oz egg noodles
- ½ cup sour cream
- ½ cup shredded mozzarella or Swiss cheese (optional, for extra creaminess)
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Brown the beef:
Heat olive oil in a large skillet or Dutch oven over medium-high heat. Season beef with salt and pepper, then brown on all sides. Remove beef and set aside. - Cook the onions:
In the same pan, add sliced onions. Cook over medium heat for 8–10 minutes until soft and lightly caramelized. Add garlic and cook 30 seconds until fragrant. - Build the sauce:
Return beef to the pan. Stir in the French onion soup mix, beef broth, water, and Worcestershire sauce. Bring to a gentle boil. - Simmer:
Reduce heat to low, cover, and simmer for 30–40 minutes, until beef is tender. - Cook the noodles:
Add egg noodles directly to the pan. Stir, cover, and cook 8–10 minutes, stirring occasionally, until noodles are tender and most of the liquid is absorbed. - Make it creamy:
Lower heat and stir in sour cream and cheese (if using) until smooth and creamy. - Serve:
Taste and adjust seasoning. Garnish with parsley if desired and serve hot.
Tips & Variations
- Slow cooker: Brown beef first, then add everything except noodles and sour cream. Cook on LOW 6–7 hours. Add noodles in the last 30 minutes, then stir in sour cream.
- Extra cheesy: Add provolone or Gruyère for a true French onion vibe.
- No sour cream: Substitute heavy cream or cream cheese.
