Crockpot French Onion Meatloaf with Melted Swiss Cheese
Ingredients:
– 2 pounds ground beef
– 1 cup breadcrumbs
– 1/2 cup grated Parmesan cheese
– 1/4 cup milk
– 2 eggs
– 1 tablespoon Worcestershire sauce
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 2 large onions, thinly sliced
– 2 tablespoons butter
– 1 cup French onion soup (ready-made or homemade)
– 6 slices Swiss cheese
– 2 tablespoons chopped parsley (for garnish)
Instructions:
1. Mix the meat:
In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, milk, eggs, Worcestershire sauce, salt, and pepper. Mix well until combined.
2. Shape the meatloaf
Shape the mixture into a loaf.
3. Prepare the onions:
In a skillet, cook sliced onions with butter over medium heat until browned and soft (about 20 minutes). Add French onion soup and mix well.
4. Place in crockpot:
Put the meatloaf in the crockpot. Spread onion mixture over the meatloaf.
5. Cook:
Cover and cook on low for 6-8 hours or high for 3-4 hours.
6. Add cheese
In the last 10 minutes, place Swiss cheese slices on top. Cover and let cheese melt.
7. Serve:
Serve with onion sauce and melted cheese. Garnish with parsley.
