Mashed Potato Pancakes with Meat Filling
Ingredients
For the meat filling:
- ½ lb (225 g) ground beef or chicken
- ½ small onion, finely chopped
- 1 clove garlic, minced
- 1 tbsp olive oil
- Salt and black pepper to taste
- ½ tsp paprika
- ½ tsp cumin (optional)
- Chopped parsley (optional)
For the mashed potato dough:
- 3 cups mashed potatoes (cold is best)
- 1 egg
- ½ cup shredded mozzarella or cheddar cheese
- ½ cup all-purpose flour (more if needed)
- Salt and black pepper to taste
For cooking:
- Oil or butter for frying
Instructions
- Prepare the meat filling:
Heat olive oil in a pan over medium heat.
Add the chopped onion and sauté until soft.
Add garlic and cook for 30 seconds.
Add ground meat, salt, pepper, paprika, and cumin.
Cook until fully browned and dry.
Stir in parsley if using. Set aside to cool. - Prepare the potato mixture:
