Ingredients

  • 1 pound (450 g) spaghetti or your favorite pasta
  • 1 pound (450 g) mushrooms, finely chopped
  • 2 tablespoons olive oil
  • 1 medium onion, finely diced
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 can (28 ounces / 800 g) crushed tomatoes
  • 1/2 cup vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon paprika
  • Salt and black pepper, to taste
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup freshly grated Parmesan cheese, plus more for serving
  • Fresh basil or parsley, for garnish

Instructions

  1. Prepare the pasta: Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain.
  2. Cook the mushrooms: Heat the olive oil in a large skillet or saucepan over medium-high heat. Add the chopped mushrooms and cook for 8–10 minutes, stirring occasionally, until they release their moisture and become deeply browned.
  3. Add the aromatics: Stir in the diced onion and cook for 4–5 minutes until softened. Add the garlic and cook for another 30–60 seconds until fragrant.
  4. Build the sauce: Add the tomato paste, oregano, basil, paprika, and red pepper flakes if using. Stir well and cook for 1–2 minutes.
  5. Simmer: Pour in the crushed tomatoes and vegetable broth. Season with salt and black pepper. Bring the sauce to a gentle simmer, then reduce the heat and cook uncovered for 20–25 minutes, stirring occasionally, until thick and flavorful.
  6. Add the Parmesan: Stir in the grated Parmesan cheese until melted into the sauce. If the sauce is too thick, add a little reserved pasta water to reach your desired consistency.
  7. Combine and serve: Add the cooked pasta to the sauce and toss until evenly coated. Serve hot with extra Parmesan and fresh basil or parsley.

Tips for the Best Mushroom Bolognese

  • Brown the mushrooms well: This develops a deeper, meatier flavor.
  • Chop the mushrooms finely: Their texture will resemble traditional Bolognese.
  • Let the sauce simmer: Extra cooking time helps the flavors blend beautifully.
  • Use freshly grated Parmesan: It melts more smoothly and adds wonderful savory flavor.
  • Make it vegetarian: Choose Parmesan made without animal rennet if you need a strictly vegetarian version.
