Easy Hamburger Stew
A hearty, comforting one-pot meal made with seasoned ground beef, tender potatoes, sweet carrots, green peas, and a rich tomato-herb broth. It’s simple, filling, budget-friendly, and perfect for a cozy family dinner.
Ingredients
- 1½ pounds ground beef
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 4 medium potatoes, peeled and cut into bite-sized chunks
- 3 carrots, peeled and sliced
- 1 cup frozen green peas
- 1 can (14.5 oz) diced tomatoes, with juices
- 2 tablespoons tomato paste
- 4 cups beef broth
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon dried Italian seasoning
- ½ teaspoon dried thyme
- 1 tablespoon Worcestershire sauce
- 2 tablespoons olive oil, if needed
- 2 tablespoons chopped fresh parsley, for garnish
Instructions
- Brown the beef: Heat a large pot or Dutch oven over medium-high heat. Add the ground beef and cook for 5–7 minutes, breaking it apart with a wooden spoon, until browned. Drain excess grease if necessary.
- Add the aromatics: Add the diced onion and cook for 3–4 minutes until softened. Stir in the minced garlic and cook for another 30 seconds.
- Build the broth: Add the tomato paste, diced tomatoes, beef broth, Worcestershire sauce, salt, black pepper, paprika, Italian seasoning, and thyme. Stir well to combine.
- Add the vegetables: Stir in the potatoes and carrots. Bring the stew to a gentle boil.
- Simmer: Reduce the heat to low, cover, and simmer for about 25–30 minutes, or until the potatoes and carrots are fork-tender.
- Add the peas: Stir in the frozen peas and cook uncovered for another 5–7 minutes, until heated through.
- Adjust and serve: Taste and adjust the seasoning as needed. Sprinkle with fresh parsley and serve hot with crusty bread, biscuits, or over rice.
Tip: For a thicker stew, mash a few pieces of potato directly against the side of the pot and stir them back into the broth before serving.
