Cheesy Stuffed Meatloaf Bites

These cheesy stuffed meatloaf bites are juicy, tender, and packed with melty cheese in every bite. They’re easy to make, perfect for appetizers, game-day snacks, or a comforting family dinner.

Ingredients

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 large egg
  • 1/4 cup finely diced onion
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • 4 ounces mozzarella or cheddar cheese, cut into small cubes

For the Glaze

  • 1/3 cup ketchup
  • 1 tablespoon brown sugar
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon garlic powder

Instructions

  1. Prepare the meat mixture: Preheat your oven to 400°F (200°C). In a large bowl, combine the breadcrumbs and milk. Let them sit for 2–3 minutes until the breadcrumbs soften.
  2. Add the ground beef, egg, onion, garlic, Worcestershire sauce, salt, pepper, Italian seasoning, and paprika. Gently mix until everything is well combined. Avoid overmixing so the meatloaf bites stay tender.
  3. Stuff with cheese: Scoop out a small portion of the meat mixture and flatten it in your hand. Place a cube of cheese in the center, then carefully fold the meat around it, completely sealing the cheese inside. Repeat with the remaining mixture.
  4. Arrange the meatloaf bites on a parchment-lined baking sheet or place them into a lightly greased muffin pan.
  5. Make the glaze: Mix the ketchup, brown sugar, Worcestershire sauce, and garlic powder in a small bowl.
  6. Brush each meatloaf bite generously with the glaze.
  7. Bake for 18–22 minutes, or until the beef is fully cooked and reaches an internal temperature of 160°F (71°C).
  8. Let them rest for about 5 minutes before serving. The cheese will be hot and gooey inside, so allow them to cool slightly.

Serving Tip

Serve these cheesy meatloaf bites with extra ketchup, barbecue sauce, ranch dressing, or your favorite dipping sauce. They’re especially delicious while warm, when the cheese is still perfectly melted.
